Would anyone like to take a stab at how Ari Hoenig pulls off the beat in this video?

The beat comes in at the 1:05 mark - I believe he's using an inverted 16th note double-stroke pattern on the snare and hi-hat.
What I'm having difficulty wrapping my mind around is how he might be sticking the section beginning at 1:20, when a halftime feel is emphasized with the addition of a backbeat on what sounds like a splash cymbal.
It's not impossible that the backbeat could be layered in, or recorded using a second percussionist, but I'm wondering if anyone has some insight or suggestions about how to make it happen individually.
